Bacon dumplings
Ingredients
150 g compact white bread or dumpling bread
40 g onions, finely chopped
1 tablespoon butter
2 tablespoons flour
80 g bacon, finely diced
100 ml milk or water
2 eggs
1 tablespoon parsley or chives, finely chopped
salt
20 ml white wine vinegar
2 tablespoons water
salt
Mill pepper
50 ml olive oil
Preparation

- Cut the bread into cubes
- Fry the diced onion in butter, add it to the bread and mix
- Mix the flour and bacon
- Mix together the milk or water, eggs, parsley and salt, pour over the bread and mix well.
- Let the mixture rest for 15 minutes, form dumplings and boil them in salted water, half-covered.
- Mix the white wine vinegar and water with salt and pepper, and stir vigorously into the olive oil.
- Serve the gnocchi with the stripped and marinated lettuce, radishes and chives.

Tip:
Depending on your taste, you can also roast the bacon.
Serve the bacon dumplings in a hearty meat soup or with a cabbage salad.
