Kaiserschmarren

Ingredients

140 g flour
100 ml milk
100 ml cream
4 egg yolks
½ kg vanilla sugar
40 g grated almonds
4 egg whites
1 pinch of salt
40 g sugar

40 g sugar

Oil for cooking
Butter for baking
Icing sugar for dusting

Preparation

  • Mix the flour, milk, cream, egg yolk, vanilla sugar and almonds into a smooth batter
  • .

  • Beat the egg whites and salt, beat them with the sugar until stiff and incorporate them into the batter
  • .

  • Heat some oil in a large frying pan, pour in the pancake batter and fry the bottom part until golden brown, then turn it over and fry it too until golden brown
  • .

  • Then place the frying pan in the preheated oven and finish frying the pancakes.
  • .

  • Then tear the pancakes into pieces with two forks.
  • .

  • Sprinkle with icing sugar, add a little butter and fry briefly on the hob to caramelise the sugar.

Tip:
You can also serve Schmarren with an apple compote. You can also use milk instead of cream, as cream makes the pancake more delicate.
